Protein Coffee Recipe: Whey, Collagen & MCT

Coffee is the one habit almost no man skips. Here is the recipe I make every morning that turns that cup into a 27-gram protein breakfast — plus the honest version of what coffee does, what it doesn't, and where the mold-free crowd is overselling.
Jump to the recipe →A man sat down in my office a few years ago with a training log I would have been proud of at thirty-five. Five days a week. Progressive loading. Not a missed session in four months. He was fifty-two and he was furious, because nothing was changing.
I asked him what he ate before noon.
Large coffee on the drive in, and a blueberry muffin from the window. Some mornings a bagel instead. That was the whole answer, every day, for years.
I have had that conversation several hundred times. Sometimes it is the muffin. Sometimes it is a bagel with a smear, or a scone, or two slices of toast, or a granola bar he has been told is health food. Occasionally it is the man who is proud that he drinks his coffee black and eats nothing at all until one in the afternoon. Every one of those mornings has the same thing in common: not a single gram of protein before noon, and in most of them, a large fast carbohydrate arriving without one.
He wasn't lazy and he wasn't uninformed. He had simply inherited the same morning most men have, where the one habit he never missed was the one habit doing nothing for him. Think about your own week. You will skip the gym. You will skip the supplements sitting on the counter. You will absolutely skip a real breakfast. But you will make the coffee. Every single time, without deciding to.
That reliability is the most under-used asset in men's health. It is the entire reason this recipe exists.
What is actually in the cup
Most of the argument about coffee is really an argument about caffeine, and those are not the same thing.
Caffeine blocks adenosine, the molecule that accumulates across your waking hours and produces the pressure to sleep. It does not remove that pressure — it occupies the receptor so you stop perceiving it. The debt keeps accruing behind the door. That one mechanism explains why coffee works, why it stops working when you are chronically underslept, and why the afternoon cup wrecks a night you needed.
On performance the evidence is unusually clean. An umbrella review of twenty-one meta-analyses found caffeine improves muscular endurance, strength, anaerobic power and aerobic endurance, with effects generally small to moderate rather than dramatic.1 Small to moderate, repeated across every training session for a decade, is a real number.
But coffee is not a caffeine delivery vehicle. It is one of the largest sources of polyphenols in the Western diet, chlorogenic acids in particular. An umbrella review in The BMJ covering 201 meta-analyses found the lowest all-cause mortality at roughly three to four cups per day, a relative risk of 0.83.2 That is observational and cannot establish cause. But two details are hard to explain away: decaffeinated coffee showed a benefit too, and a UK Biobank analysis of roughly half a million people found the association held regardless of whether someone carried the genetic variants for fast or slow caffeine metabolism.3
If the benefit ran entirely through caffeine, the slow metabolizers should have looked different. They didn't. Whatever coffee is doing, caffeine is not the only thing doing it.
The half of the cup that is empty
So coffee holds up. The problem is not what is in the cup. The problem is what is not.
Muscle does not respond to the daily total in your tracking app. It responds to the protein dose in a given meal. In a crossover feeding trial, when the same total daily protein was spread evenly across three meals instead of loaded into dinner, twenty-four-hour muscle protein synthesis ran 25 percent higher.4 Same food. Same grams. Different arrangement.
That study enrolled eight people. Eight. I am not going to hand you a headline number without telling you the sample size, and a trial that small proves a mechanism rather than a population. But the finding has been reproduced in design after design, including a trial of twenty-four trained men where four 20-gram feedings beat both eight small ones and two large ones.5 And it lands hardest on the men reading this, because older muscle is measurably less responsive to the same protein dose — anabolic resistance — which is why published guidelines for older adults commonly land at 1.0 to 1.2 grams per kilogram per day or higher rather than the 0.8 that prevents deficiency.6
You need more protein at 56 than you needed at 26. And nearly every man I have measured is eating less.

Coffee and a muffin is worse than coffee alone
I want to be precise about this, because it is the part men resist. The pastry is not just a wasted opportunity. On the specific question of how the rest of your day goes, coffee with a muffin can leave you worse off than coffee with nothing.
The reason is not that carbohydrate is evil. It is what a large, fast carbohydrate does without protein or fat to slow it down. Glucose rises quickly, insulin rises to meet it, and in a lot of people the correction overshoots — blood sugar comes back down past where it started an hour or two later. That undershoot is what you feel as the ten-thirty wall, and your brain does not experience it as a blood sugar curve. It experiences it as hunger.
Two pieces of evidence are worth knowing here, and both come with caveats I am going to state rather than bury.
The first is a crossover trial where subjects ate calorie-matched breakfasts and lunches of low, medium or high glycemic index. In the five hours after lunch, voluntary food intake after the high-glycemic day was 81 percent greater than after the low-glycemic day.7 Same calories in. Dramatically different appetite afterward. The caveat is real and I will say it plainly: twelve obese adolescent boys, not middle-aged men. That is a mechanism demonstration, not a population finding. It is also worth noting what the low-glycemic arm actually was — a vegetable omelet. A protein breakfast.
The second is much larger and much more recent. Researchers put continuous glucose monitors on 1,070 people across more than 8,600 standardized meals and found that the size of the glucose dip two to three hours after a meal predicted more hunger, a shorter time until the next meal, more food eaten three to four hours later, and more food eaten across the following 24 hours.8 Here is the honest reading: the correlations were modest, in the range of 0.16 to 0.27, so this is a real signal rather than a law of nature. Several of the authors also work for the company selling the glucose-monitoring program, which I would rather you hear from me than discover on your own. Even so, the direction matches the mechanism and it matches what I watch happen in practice.
Put the two together and you get the sentence I say in the exam room: the muffin does not just fail to feed you, it makes eleven o'clock harder than it needed to be. You paid three hundred calories to be hungrier than you would have been on coffee alone. Then you overcorrect at lunch, you are foraging by three, and by nine at night you are standing in front of an open refrigerator wondering where your discipline went. It was never discipline. It was arithmetic that started at seven in the morning.
What a real breakfast actually buys you
Muscle is the headline, but it is not the only thing that changes when you put protein into the first ninety minutes of the day.
You have been in the wrong direction all night. Sleep is an eight-to-ten hour fast, and across it muscle protein breakdown runs ahead of muscle protein synthesis. That is normal and it is not a crisis. But it means you wake up in a net negative, and the thing that reverses it is not the alarm clock, the shower or the coffee. It is amino acids arriving in the bloodstream. Until they do, you are still in the hole. A man who eats his first protein at one in the afternoon spends five or six waking hours a day in a state he could have switched off in ninety seconds, and he does it every day for a decade, and then he wonders why the mirror is losing an argument the gym should be winning.
Your appetite stops running the afternoon. Protein is the most satiating of the three macronutrients, and it works through machinery you can name: it slows gastric emptying and drives release of the gut peptides cholecystokinin, GLP-1 and peptide YY, while blunting the post-meal rebound in ghrelin, the hormone that tells your brain to go find food.10 It also arrives with almost no glycemic load, so there is no rise steep enough to produce the dip we just talked about. Where the muffin sets a trap for eleven o'clock, protein simply does not set one.
Here is the calibrated version, because this is a category where the marketing runs far ahead of the data. In a review published in The American Journal of Clinical Nutrition, 17 of 24 studies — about 71 percent — found at least one favorable change in appetite measures after a higher-protein meal compared with a lower-protein one.9 That is a strong, consistent signal. It is not every study, and I am not going to round it up to "protein eliminates hunger." What it means practically is that most men who anchor breakfast with 30 grams of protein find the rest of the day gets quieter, and some don't.
And the whole day gets easier to steer. This is the part I most want you to take away. Almost nobody fails at nutrition at seven in the morning. They fail at three in the afternoon, and at nine at night, and by then it feels like a character problem. It usually isn't. It is a man making decisions from a physiological hole he dug before he left the house. Feed the first meal properly and the later decisions get made by someone who is not starving — which is a completely different person with completely different judgment. That is what I mean by setting the day up. You are not white-knuckling your way to better choices. You are removing the pressure that was making them hard.
You stop riding the caffeine line by itself. I want to be careful here, because this is where the supplement industry starts writing checks the research has not cashed. I cannot hand you a trial demonstrating that a protein shake makes a man measurably sharper at ten in the morning. What I can tell you, after thirty-three years of watching this in practice, is that most of the mid-morning fog men bring me is not a caffeine deficiency. It is a caffeine-only breakfast on an empty stomach, or a pastry-and-caffeine breakfast on the way down from its own spike, and the steadiness they report after they change it is the ordinary consequence of having actually eaten. That is a real benefit. It just deserves to be described honestly.
And the connective tissue gets fed too. This is where the collagen earns its place beside the whey rather than competing with it. They do genuinely different jobs. Whey is the complete protein — all nine essential amino acids, roughly 2 grams of leucine per scoop, the signal that tells muscle to build. Collagen is not complete and never will be, but it is unusually rich in glycine, proline and hydroxyproline: the three amino acids that tendon, ligament, cartilage matrix and skin are actually built from, and the ones ordinary dietary protein is comparatively poor in.
Most men past fifty are not losing the argument in the muscle. They are losing it in the tissue that connects the muscle to the skeleton — the shoulder that complains, the Achilles that never fully came back, the knee that decides the schedule. Put both in the same mug and you cover the engine and the mounting brackets in one drink instead of choosing between them. Whey also supplies the tryptophan collagen has none of, which is the specific reason these two belong together rather than in separate shakers.
That is the whole thesis of this recipe. Not a miracle. Just a first meal that leaves your muscle fed, your joints supplied, your appetite settled and your morning steady — before you have made a single other good decision all day.
Coffee is not the problem with the American breakfast. The problem is that for most men, coffee is the American breakfast.
The honest complication: the mold-free coffee argument
You cannot spend ten minutes in this corner of the internet without meeting the claim that ordinary coffee is loaded with mycotoxins, and that the fog, the jitters and the crash you feel are the mold rather than the caffeine. I buy carefully sourced coffee myself. I am also not going to repeat a number I cannot trace, so here is the calibrated version.
The molecule in question is ochratoxin A, produced by Aspergillus species when coffee is harvested wet, dried poorly or stored humid. It is real, it is nephrotoxic in animals, and the European Union regulates it in roasted and ground coffee at 3 micrograms per kilogram.11 The United States and Codex have set no limit for coffee at all, which is a legitimate criticism of American regulation.
Now the part the viral version leaves out. Ochratoxin A is heat-labile at roasting temperatures — the European Food Safety Authority's 2020 assessment reports losses of 70 percent to greater than 90 percent above 180°C, which is ordinary roasting.12 And when a 2021 risk assessment in the Journal of Food Science worked through the real occurrence and exposure data for coffee, estimated intakes came in below the tolerable daily intake benchmarks regulators use.13 Systematic reviews land in the same place.
So here is where I actually land: the case for buying well-sourced coffee is a sourcing and quality argument, not a toxicology emergency. A roaster who controls moisture at harvest, dries properly, stores climate-controlled and moves inventory fast produces coffee that is fresher, tastes better and carries less of everything you would rather not drink. That is worth paying for. It is not worth being frightened into.
And if your coffee genuinely leaves you wired and then flattened by ten, four explanations sit ahead of mold: empty stomach, six hours of sleep, slow caffeine metabolism, or 400 milligrams before nine in the morning.
The coffee I actually buy

The beans are also remineralized with fulvic and humic minerals, which the company reports as 50-plus trace minerals per cup. I cannot find published per-serving amounts I can hold up against a Daily Value, so I am not going to describe that as a mineral supplement. Treat it as a flavor and quality feature, and get your minerals from food and from a formula where the label tells you the number.

Coffee is not neutral for everyone, and the interactions are timing problems more often than they are stop-drinking-it problems. Worth raising at your next visit:
- Thyroid replacement. Levothyroxine absorption is reduced by coffee and by calcium. Ask how far to separate them — the usual answer is 30 to 60 minutes from coffee and about four hours from calcium.
- Blood pressure and rhythm. If you have uncontrolled hypertension, palpitations, or a history of atrial fibrillation, ask where your caffeine ceiling should sit rather than guessing.
- Anything that slows caffeine clearance. Fluvoxamine, ciprofloxacin and some oral contraceptives inhibit CYP1A2, the enzyme that clears caffeine. Same cup, much longer half-life.
- Reflux, ulcers, or bladder irritation. Common, under-reported, and often fixed by moving the cup to after food.
- The workup, if your mornings are the problem. A fasting insulin, hemoglobin A1c, comprehensive metabolic panel, lipid panel, ferritin, and an actual body composition measurement. If you are relying on caffeine to function, ask why — the answer is usually in those numbers or in your sleep, not in your coffee.
The free levers first
Every one of these costs nothing, and every one of them outranks anything I sell. If you do only these, you will be better off than the man who buys the powder and skips them.
- Put a hard stop on caffeine. In a small crossover study of twelve people, 400 milligrams taken six hours before bed still cut objectively measured total sleep time by more than an hour — and the participants never perceived it.14 Twelve subjects is a small study and I will call it that. But if your bedtime is 10 p.m., the last cup goes down by 2 p.m.
- Know your ceiling. The European Food Safety Authority concluded habitual intakes up to 400 milligrams per day are not a safety concern for healthy adults, with single doses up to 200.15 A shot of espresso is roughly 60 to 65 milligrams; eight ounces of drip is roughly 95. Count honestly.
- Eat before you leave the house. The whole argument here is protein at breakfast, and eggs do it for free. A shake is what I use because it survives a hard week. It is not superior to food.
- Audit what is already going in the cup. Most flavored creamers lead with corn syrup solids or maltodextrin and a refined or hydrogenated oil. Two tablespoons, twice a day, three hundred and sixty-five days is a real number of calories you never decided to eat.
- Drink water before coffee, not instead of it. Sixteen ounces on waking. You have been fasting and mildly dehydrated for eight hours, and the fatigue you are medicating is sometimes just that.
The Halftime Cappuccino
This is the cup I make every morning, and it exists because I got tired of choosing between the coffee I actually wanted and the breakfast I actually needed. It takes about ninety seconds. It tastes like a chocolate cappuccino from a good shop. And it lands 27 grams of protein before most men have gotten in the car.
You do not need an espresso machine. A shot of espresso is what I use, but four to six ounces of strong drip or French press does the same job.
What goes in
- 4 ozHot water — hot, not boiling

How I build it
- Four ounces of hot water into a large mug. Hot, not boiling — boiling water will make whey clump before it can dissolve.
- One to two scoops of whey. Stir or froth until it is smooth. Do this before anything else goes in and you will never fight a lump.
- Pull the espresso and pour it straight in.
- Two scoops of Collagen MCT Creamer. This is where it stops tasting like a protein shake and starts tasting like a cappuccino.
- Three ounces of coconut milk.
- Froth or blend fifteen seconds. A ten-dollar handheld frother is the cheapest tool that gets this right. Drink it hot.
Figures for one scoop of Dutch Chocolate whey (17 g protein, 90 cal) plus two scoops of Collagen MCT Creamer (10 g protein, 70 cal), one shot of espresso and 3 oz of unsweetened coconut milk. Two scoops of whey takes it to roughly 44 g protein and 285 calories. French Vanilla whey carries 19 g per scoop instead of 17.
Pick your flavor, then pick your scoop count
Both flavors are the same whey, the same fractions and the same testing. The only real difference is cocoa, and cocoa changes two things worth knowing about.
Why each thing is in there
The whey is the muscle protein. Seventeen grams of complete protein in a 24-gram scoop, with 4.25 grams of branched-chain amino acids. It is the only ingredient in this cup that carries the full essential amino acid profile.
The creamer is the connective tissue and the texture. Ten grams of hydrolyzed collagen peptides and two grams of MCT, with zero added sugar. Collagen is glycine, proline and hydroxyproline — the specific amino acids that tendon, ligament, cartilage matrix and skin are built from, and the ones ordinary dietary protein is comparatively poor in. Medium-chain fats are also absorbed more directly than long-chain fats, largely through the portal vein to the liver, which is why they turn up in the routines of people managing energy across a long morning.16 And practically: the MCT is what gives this real cappuccino body instead of thin protein water.
The coconut milk is mouthfeel. That is the whole job. Four ingredients, no gums, no oils, no added sugar.
The one thing you drink every morning, doing something for you.
Ten grams of hydrolyzed collagen peptides and two grams of MCT, replacing the creamer already sitting in your kitchen. No dairy, no added sugar, no seed oils.

I would rather tell you the ceiling now than have you disappointed in three weeks.
One scoop is a solid protein feeding, not a maximal one. Run the arithmetic with me. Leucine is roughly half of whey's branched-chain content, so 4.25 grams of BCAA works out to about 1.8 to 2.1 grams of leucine. Much of the research on maximizing muscle protein synthesis in a single sitting uses 2.5 to 3 grams, and older adults appear to need the top of that range. If maximizing that specific feeding is the goal, run two scoops or run one alongside real food. Anyone telling you a 17-gram scoop maximizes muscle protein synthesis on its own is selling rather than calculating.
The collagen is not muscle protein and I will not pretend it is. Collagen contains no tryptophan and is low in several essential amino acids. Its ten grams belong in the connective tissue column, not the muscle column, and the human evidence there is promising rather than settled — the tendon work is small and short.17,18 Both are in the cup because they do different jobs, not because one covers for the other.
It breaks a fast, and it stacks calcium. Roughly 195 calories with 27 grams of protein is food, so this is your first meal rather than something you drink during the fasting window. Two scoops of creamer also carry 560 milligrams of calcium and a scoop of whey adds 100 — count that toward your daily total if you take a multivitamin or a calcium supplement, and raise it with your physician if you have a history of kidney stones or documented vascular calcification.
If you drink two protein servings a day, make the second one vanilla. Cacao takes up cadmium from soil, and our chocolate lot assayed at 1.8 micrograms per serving — below both the USP and Proposition 65 daily benchmarks at one serving, using most of the margin at two. The French Vanilla contains no cocoa. That is our own certificate of analysis, published on the product page, and I would rather you know the number than trust an adjective.
And it will not fix your sleep. Nothing in this cup will. If you are pouring caffeine on top of six hours a night, you are managing the symptom of a problem you are refusing to name.
The second half is where the game is decided
That patient with the flawless training log did not need a new program. He needed the first ninety minutes of his day to stop being a caffeine-only wasteland.
That is what I like about this cup. It asks you to remember nothing, schedule nothing, and want nothing badly enough to change your routine. You were going to make the coffee. Nobody has ever had to be talked into that. All this does is decide what goes in it.
You are not going to out-supplement a bad morning, and I am not asking you to. Eat the eggs. Get the sleep. Lift the weight. Then, when the foundation is real, a cup like this one multiplies it — because a multiplier applied to zero still returns zero, and that arithmetic has never once been kind to anybody.
Twenty-seven grams of protein and a good cup of coffee before eight in the morning is not a transformation. It is one decision, made once, that then makes itself every day for the rest of your life. I am fifty-six, I race Ironman, I compete drug-free, I take no prescription medication, and this is what was in my mug this morning and yesterday morning. Pick up the whey, pick up the creamer, and stop letting the most reliable habit you own do nothing for you.
It's only halftime.
